Можно ли, не переустанавливая систему, перейти на x86-64?
Если да, то как это сделать правильно?

Можно, но не нужно, поскольку болезненно
Бэкапьте /home, /etc и `rpm -qa --qf='%{NAME}\n' | sort`.
