Править под себя конфиги:
/etc/coueir-imap/*
/etc/sysconfig/courier-imap
Далее, '# service courier-authdaemon start' (демон авторизации, нужен
всегда) и делее, см. имеющиеся скрипты courier-* в /etc/rc.d/init.d/
(для запуска соответствующих демонов POP3|POP3-SSL|IMAP|IMAP-SSL).

PS. Почта в ящики должна складываться в формате Maildir - см. пакет
maildrop.

В файле /etc/courier-imap/pop3d исправить
POP3DSTART=Yes
ADDRESS=your.ip.add.ress #если надо
Посмотреть /etc/courier-imap/authdaemon.conf, если надо, исправить
под себя. Посмотреть /etc/sysconfig/courier-imap.
#service courier-authdaemon start
#service courier-pop3d start
