Если речь идёт о перенаправлениях в bash, то действия "> >" не
существует. Рассмотрим пример:
ls > >(tr a-z A-Z)
Здесь есть, во-первых, обычное перенаправление ">", а во-вторых,
подстановка дескриптора ">(command)". То есть, две отдельные
конструкции, и про обе рассказано в man bash.
