Можно. Для установки с использованием software raid надо при разбиении
диска в режиме эксперт отметить часть разделов как raid, создать там
массив и установиться на него как обычно.
Note: Также можно установиться на / в виде массива, но в этом случае для
загрузки ядра необходимо создать специальный initrd. По умолчанию система
загрузиться не сможет...
