Объясните пожалуйста, как можно менять темы gtk1 приложений (Evolution и
т.п.)?

Надо установить пакет gtk-theme-switch
Затем нужны gtk-engines для GTK1. Однако, тут возникает проблема
зависимостей пакетов. Я сделал так: установил gtk-engines от АСПЛинукс
7.3 (или от АЛМ 2.0). После этого сохранил содержимое
/usr/lib/gtk/themes/engines и удалил пакет. Восстановил упомянутый
каталог. Темы качал с themes.freshmeat.net. Хотя, можно постаить пакет
GTK-themes (по-мойму так) из АЛМ 2.0, мне просто качать 18 мегов лень
было.
