Все оказалось просто: на клиенте надо пускать portmapper с ключем -l, что
собственно и отличает
control portmap server
от
control portmap local
Однако... Это надо в какой-нибудь FAQ записать, а то на wiki Сизифа только
ссылка на общий FAQ всего NFS'а, где я этого момента не нашел.
