Под оффтопиком симлинки не поддерживаются.
Если к серверу доступ затруднён, но хотя бы эккаунт на нём есть, то можно
зайти на него по ssh (PuTTY под винду бесплатный).
Второй вариант - загрузиться с компакта (KNoPPIX, blin) и стянуть по ftp на
подключенный винт. при этом винт предварительно отформатировать на что-то,
поддерживающее симлинки (ext2/3, reiserfs, umsdos, etc.)
