Шутка, хотя и близкая к правде. Смотрите /etc/init.d/wine, расставляйте
дебажные метки, смотрите, где отваливается и гоняйте эту команду до
победного конца. Если это скрипт, то алгоритм применяется рекурсивно,
если нет, то ищутся ключики вроде -d 255, -vvvv, -X и т.д. strace - это
уже, скорее, от отчаяния :) Хотя и действенно:
# strace -f -ff -o trace [-e trace=file] service wine start
# for i in trace*; do less "$i"; done

Очень интересны логи сервера в этот момент и tcpdump с обоих сторон.
Если в скрипте, то можно делать tcpdump -w <filename> с последующим
анализом ethereal. Очень познавательно :)
