не наблюдаю. Xorg и Gnome из Сизифа.
Хотя есть интересное наблюдение.
В этом диалоге я вижу:
1. в папке /usr/share/icons напротив имени реальная иконка.
2. в папке /usr/share/icons/hicolor/48x48/apps/ напротив имени одна и
та же иконка (из тех, что в mimetypes)
и те, и те - PNG.

Упростите себе задачу - протащите-и-бросьте нужную иконку на окно
свойств файла.
