Приветствую.
А есть ли возможность сделать на hdd разметку GPT, но оставить
старый вариант загрузки?
В теории должно быть возможно, если записать туда соответствующий
MBR. Правда тут вопрос ещё с BIOS от Intel, в котором стали хотеть
активный раздел, но это можно, по идее, тоже устроить. А вот на
практике как?

Есть. Создаёте BIOS Boot Partition в 1 MiB (инсталлятор делает 8 MiB). И ставите систему.
Инсталлятор сам сделает активным PMBR (Protective MBR).
