С пакетом идет документация,
rpm -qd courier-imap
загляните в каталог /etc/courier-imap, там лежат конфигурационные файлы,
настройте, а затем запустите нужные сервисы.

Решил поставить сабж для работы с maildir-ами. Однако ничего не
получилось, я просто не могу найти чем его запускать.
courier_authd запущен, а courier_imapd просто не откликается на
попытки его запустить... В чем я ошибся?
Дистриб - коробочный мастер 2.2

И /etc/courier-imap/<нужные сервисы>: в конфигах есть
параметры вида *START (или START*), по умолчанию они =NO.
