Общий рецепт для всех GNOME3 приложений, чтоб работали без gnome-shell:
1. Установить dconf, если вдруг его не оказалось в зависимостях, как у
evince.
2. Установить gnome-icon-theme.
3. Прописать в ~/.config/gtk-3.0/settings.ini как минимум
[Settings]
gtk-fallback-icon-theme = gnome
Прочие, могущие кому-то быть полезными настройки для GTK3, можно
посмотреть тут: https://developer.gnome.org/gtk3/3.8/GtkSettings.html
Для XFCE и E17 пункт 3 не требуется. ICEWM, fluxbox не умеют совсем, а
KDE не умеет правильно устанавливать тему значков для приложений GTK3.
