Ну во-первых, никто не заставляет делать файловые системы
ext{2,3}, можно и jffs2. Во-вторых, в /etc при старте
меняется вроде только mtab, который можно сделать
симлинком на /proc/mounts. А /tmp на tmpfs.
В третьих, смонтировать разделы с noatime.
А вообще, лучше посмотреть на метод создания
livecd с помощью separator, может быть полезно.
