Я изначально неточно выразился. Ничего не меняется, сервер
остаётся dovecot, протокол остаётся imap, почта остаётся на
сервере, а формат хранения на сервере меняется - с maildir на
mbox. Как в своё время изменился с mbox на maildir с помощью
скрипта mb2md.
Аналог такого скрипта я и искал, только в обратную сторону.

Это точно оно, с небольшой правкой скрипта (прописать полный путь
к maildir2mbox и каталог поиска) конвертирует правильно, письма
не теряет, inbox выцепляет правильно.
