Не сервера, а умолчальные порты для них: в зависимости от
желания админа на _любом_ порту может висеть _любой_ сервис. (В
приделах разумного ;-))

Деталей незнаю (ниже - ИМХО). ;-)
Историческое наследие, наверное: IMAP серверов (внешних)
настроенных не на 143 порт пока не встречал. IMAP отличный от 4
- тоже. Помоему IMAP4 (сервер) совместим с IMAP2 (клиент). (Про
IMAP3 - не в курсе.)
