Вопрос следующий:
Кто-нибудь разбирался с arpwatch?
Я просто немного не пойму, как сделать файлик с ip & mac...
Киньте пример, плиз...

Никак. Он автоматом создается.
Если интерфейсов несколько можно запускать так:
arpwatch -f /var/lib/arpwatch/eth0-arp.dat -i eth0
arpwatch -f /var/lib/arpwatch/eth1-arp.dat -i eth1
чтобы в разные файлы писалось.
