см. например описание на xterm
на предмет переназначения фонтов
xterm можно настроить на работу в разных локалях
и юзать его в нужной локали
можно просто так пускать:
export LANG=ru_RU.CP1251 && xterm -fn "какой-нибудь фонт 1251" -e ssh
можно фонты сменить уже в работающем xterm итд
