Об этом здесь уже говорили неоднократно:
-- основные шрифты системы -- XFree86-cyr_rfx-fonts-{koi8-r, cp1251}, их
обязательно надо ставить;
-- для работы evolution надо настроить шрифты в control-center (gtkhtml)
