Насколько понимаю, отбиваете несколько небольших разделов
и полученные block device указываете mkfs.

Ни для каких, поскольку /boot делать обычно нет смысла уже давно.
PS: я бы предложил на 500-ках сделать минимум два зеркала --
для / и для /home; на 80-ке держать журналы -- подумал бы дважды,
особенно если SATA (поскольку диск может не зажиться, а потерю
журнала ФС переживают плохо, насколько слышал -- меня пока
миновало). Вот бэкапы и малоценку туда укладывать вполне можно.
