Иногда apache начинает потреблять 100 процентов CPU (память расходует при этом
вполне умеренно), простым рестартом проблема решается, но хотелось бы найти
корень баги. Есть ли какой способ отловить что там внутри апача происходит?

См. лог? Ещё есть apachetop и mytop, возможно, вместе помогут.
