Всё остальное можно umount. Удалённо не выйдет только /home,
если сидишь на нём, и /var. Довольно удобно в случае openvz,
особенно с мини-корнем на отдельном шпинделе. Думаю по этому
поводу попробовать [r/o?] флэшки именно для ovz root.

Кажется, ещё hdparm умеет сказать ядру перечитать таблицу.
