Подчас такое делается симлинками -- например, переложить
/usr/share/doc в /home/doc и сказать
# cd /usr/share; ln -s ../../home/doc .
(относительный путь -- на случай, если эти разделы будут ещё
откуда-то монтироваться; здесь скорее иллюстрация, но при
переносе более других вещей бывает и важно)
Ну или man mount по части --bind.
