Так вам гуёво или в юникс-стиле? Насколько я помню, в таком контексте
unix-style - это умение работать в CLI и сопрягать между собой разные
программы.

date -s 10:30
установит время на 10:30.
date -s 'Nov 14'
установит дату на 14-е ноября.
Что непонятного?
В конце концов, используйте простейший shell-скрипт с Xdialog.
