В /boot/grub/menu.lst изменить опцию 'default' или просто передвинуть
нужный пункт на первое место.

Почитайте info grub, там много всего.

Я для себя сделал выбор: для серверов -- lilo (в частности, из-за опции
-R), для дома гриб, за его мощный интерактив при загрузке.
