А смысл делать отдельным разделом /boot?
Если хотите, то делайте 4 md-устройства:
md0 - sd{a,b}1 - swap
md1 - sd{a,b}2 - boot
md2 - sd{a,b}3 - /
md3 - sd{a,b}4 - /var
Но я такую установку не тестировал.
