Postfix в конфигурации по умолчанию заточен под постоянное
соединение с Инетом; для dialup'а рекомендуется добавить релей на
SMTP-сервер провайдера и defer_transport=smtp. Подробнее - в
/usr/share/doc/postfix-1.1.12/html/faq.html
Fetchmail достаточно прозрачно настраивается с помощью
fetchmailconf (в меню фигурирует под именем "Настройка
Fetchmail").
Для настройки procmail есть три мана (man procmail, man
procmailrc, man procmailex) и общее руководство по фильтрации
почты (aka FILTERING MAIL FAQ):

Что касается работы почтового клиента со всем этим хозяйством, то
она определяется в настройках учетной записи в самом клиенте.
Нужно обязательно указать в качестве сервера SMTP "localhost" и
протокол "Нет(локальный)", остальное можно оставить по умолчанию
(так, во всяком случае, в Сильфиде). Если postfix и fetchmail
работают, то внешние программы для отправки и приема почты можно
отключить.
