Кто-нибудь может мне объяснить, что за безобразие происходит?

Что у вас там в /etc/postfix/mynetworks?
и relay_domains закоментарен....

а зачем? это надо, когда _я_ посылаю, нет? мне-то
не нпдо релеить через кого-то, я и сам могу
отправить?
А еще у меня в maillog встретился connect from
conference.peet.spb.ru - это же я, эта запись была
сделана для jabber, как с conference мог кто-то
подключиться (или я), ведь по умолчанию мой хост
либо localhost, либо peet.spb.ru?

Где она была сделана для jabber? В DNS? Если да, то уберите.
Указание jid (conference.FQDN) нужно только для внутренней
маршрутизации компонент сервера jabber, в DNS должен упоминаться
FQDN.
