такой вопрос: для чего нужен пакет grub-graph?
Я так понял, что это изображения для grub, но где они используются
и как сделать так, чтобы grub их использовал?

Кладете в /boot/grub/pictures изображения в формате XPM, затем в настройки
Grub помещаете (изображение и место, где оно хранится варьируется):
display vga16
splashimage (hd0,0)/grub/pictures/alt-in-dark.xpm
Вместо всех упоминаний о цвете, которые там есть. После этого
перезагружаетесь и любуетесь картинкой. Grub должен быть самый последний
из Сизифа.
