2 варианта:
1) Указание адреса отправителя в MUA
2) Задействование sender_canonical
КакСде:
Файл sender_canonical формата
pupkin pupupkin@superpuperserver.fr
postmap sender_canonical
И разкоментарить|дописать строчечку в main.cf
