Под Линуксом есть ipchains, которые легко настраиваются
при помощи gfcc из одноименного (gfcc) пакета.

Зачем? Если для почтового сервера, посмотрите на drweb, avp. Для
рабочей станции - нет смысла. Лучший антивирус - не запускать
серверные приложения, плохо представляя процесс их работы.
Здравый смысл, короче :) А с вирусами под Linux нынче напряженка,
и это тоже хорошо :)

Такого нет, и очень хорошо :) Интерфейс к правилам firewall для
ядер 2.2.x - ipchains (gui для него - gfcc), для ядер 2.4.x -
iptables (с ним разобраться сложнее). Это на пакетном уровне.
Есть еще tcp-wrappers и т.д.
