Если каждый из 3-х офисов имеет собств. доменное имя (хотя бы внутри сети) и для каждого из них определена запись MX в DNS, то в общем-то никакой доп. настройки Postfix-ов на почтовых серверах не нужно.
Всё будет именно так, как написано по умолчанию.
