В grub можно сделать например так:
- в начале menu.lst пишем password <пароль>
- в заблокированных пунктах меню добавляем слово lock
или
- в начале menu.lst пишем password <пароль> menu2.lst
- в menu2.lst выносим все пункты, которые надо блокировать.
До ввода пароля коммандная строка заблокирована.
