Про Emacs ищите в сети "Руководство по GNU Emacs".
Про AUCTeX по-русски ничего нет. Если сделать все, как написано в
его документации при сборке и установке, то AUCTeX включается сам
при открытии LaTeX файлов. Но сначала нужно почитать
"Руководство ..." часть "Настройка"->"Файл инициализации,
`~/.emacs'" и info auctex
Кстати, AUCTeX скоро должен появиться в Sisyphus, соответственно,
установка упростится.
Удачи. Дело трудное, но результат очень приятный.
