Нужно выяснить, какой именно уровень был настроен.
Если нулевой - информацию не восстановить, т. к. она на
оставшихся винтах неполная, не стОит и пытаться.
Берете последнюю резервную копию ...
Если 1-й - должно все подняться, только в биосе нужно указать,
что загрузочный теперь - винт оставшийся вживых.
Причем можно и на самом винте поставить номер устройства,
соответствующий загрузочному.
Soft-RAID узнает "свои" винты по сигнатурам, записанным в
служебную область диска при создании массива.
