Сеё от _личных_ предпочтений зависит. :-)
Я обычно bind использую, благо в ALT он "из коробки" в кешерующем
режиме работает. (По минимуму -- "forward first" на провайдерские
сервера, обычно, прописываю. Но и это не обязательно...)
Если на модеме -- pdnsd.
