Базу надо было дампить заранее.
Впрочем, возможно, она ещё не сдохла.

В имени ноды хостнейм упоминать было нельзя, надо было ставить localhost.

Для начала попробовать поменять хостнейм на старый, сдампить базу,
поменять имя ноды на нормальное (ejabberd@localhost), ресторнуть базу и
поменять хостнейм на новый.
