В 2.10 есть свой настройщик, не знаю остался ли xkb - у меня не стоит.
Находится он в меню "Среда Gnome" (или "Рабочая среда" в до-релизных
сборках) / Параметры / Клавиатура.
Как правильно называется не знаю, если нажать кнопку Cправка, вылезает
yеlp с жалобой: Could not load section. The section ‘goscustperiph-2’
does not exist in this document. If you were directed to this section
from a Help button in an application, please report this to the
maintainers of that application.
