Умолчание на тот случай, когда версия не выбрана, зашито в пакет
по имени gcc.
Переменную среды GCC_VERSION, как и любую другую, можно определить
глобально, например, с помощью ~/.bash_profile и /etc/bashrc.d/*.sh
