Новая утилита su поддерживает именно эти опции. Если что-то перестало
работать, то это баг, о котором надо сообщать maintainer'ам тех пакетов,
которые не работают (либо мне, если su работает не так, как должно).

Это правильно: ради подобного эффекта и был указан /dev/null.
Если Вам нужен "su - fetchmail", запустите "su -s /bin/sh - fetchmail".
