1) Сканер настраивается через sane. Вот здесь

сказано, что sane его поддерживает хорошо, это usb-устройство;
id-производителя 0x04e8 , id-модели 0x341b , внутреннее, для sane, имя
данного устроуства sane-xerox_mfp.
Вам необюходимо прописать соотвестсвующие значения в настройках sane
2) принтер это уже CUPS. Вот здесь

сказано как его подключить в CUPS'е
