Возможно, для начала вам будет интересно взглянуть в сторону LTSP:

С этой технологией можно подключаться и к Windows- терминальному серверу по
RDP.
Про запуск 1С на линуксе можно посмотреть здесь:

С торговым оборудованием всё будет зависить от выбранной вами конфигурации
всей системы.
Если клиенты будут работать на Windows-Terminal, то всё сводится к проброске
оборудования с клиентов на сервер.
