Вы точто погуглили "backup MX" и сознательно решили делать именно
так, а не как обычно? (с "как обычно" есть нюансы с антиспамом --
или одинаковый на обоих MX-ах, или могут быть неприятные эффекты)

Ещё как имеют, если включить в "postfix" тот delivery agent,
который он дёргает для доставки в ящик.

Это вторая часть вопроса. У меня пока ощущение, что первую
просто пытаются решить, не зная про обычную практику :)
А бэкапить -- rsync, вестимо. Только похоже, что root@
плюс PermitRootLogin without-password в sshd_config
(как в 4.0 по умолчанию), чтоб не изобретать ещё и схемы
синхронизации для каждого пользователя (хотя...).
