Поскольку подобными вещами давно не занимаюсь немогу привести точных строк, но
направление подскажу.
Громкость можно повысить добавив аудио фильтр, что-то типа -aop volume=10:10
(более точно посмотришь в манах).
Потом по поводу 6 канального звука, если он тебе нужен то пережимать его из
ac3 в mp3 нет смысла, - ac3 и без того достаточно сильно пожат помоему
128кбит/с на канал, так что -aoc copy спасёт отца русской демократии. Другой
вариант истинный гемор сделать мульти трековый mpeg1-layer2 такая фишка
использовалась в некоторых редких SVCD. По этому поводу пожно найти инфу в
инете (google.ru)
Если нужно стерео то необходимо для надёжности сделать такой donwmix, опция
типа -channels 2.
Ну и самое интересное для себя ты можешь почитать в доках к mplayer, файл
помоему назывался mencoder-tips.txt там приличные примеры и детальное описание.
