А что на клиенте стоит? А если там буферизацию отключить?

У меня по графику в Gkrellm тоже было видно, что данные
идут порциями. Но это были своевременные порции, так что
разрывов не случалось.
Какие у Вас настройки icecast и ices(?) ?
